
Roasted Pepper Hummus
2 cloves garlic, minced
1/3 cup tahini
1/3 cup lemon juice
1 (15 oz) can garbanzo beans, drained
1/2 cup roasted Piquillo peppers
Salt & pepper to taste
In an electric food processor, combine garlic, garbanzo beans, tahini,
and lemon juice. Process until the mixture is smooth. Add roasted Piquillo
peppers; process until the peppers are finely chopped. Season with salt
and pepper. Transfer hummus to small bowl, cover and chill until you are
ready to serve.
Caramel Chocolate Dip
1 pkg (14 oz) caramels
1 can (5 oz) evaporated milk
1/2 teaspoon vanilla
1/2 cup semi-sweet chocolate morsels
Place all ingredients in a microwave safe
bowl. Heat on high for 3 minutes. Stir
and return to microwave and continue
to cook every 30 seconds to 1 minute
or until all of the caramels and chocolate
morsels have melted. Stir until smooth.
This dip is best when enjoyed warm.
